October
The first harvest gave us 350kg of pure green olives. This olive oil is fiery, and has a peppery dominance, with a complex aftertaste. Picking olives early results always in less olive oil, but with high anti-oxidants/polyphenols which make it so punchy. We achieved a 16% yield in 60 litres.
November
In November we continued with 620kg with majority green flesh. The taste is soft at the beginning and then the pepper punches in your throat and mouth. Greatly combined in a salad with fresh ingredients help blend the soft beginning and punchy ending. This harvest resulted in 21% yield and 130 litres.
December
Finishing off with the valley, we picked 480kg with a yield of 23% olive oil or 110 litres. These olives look like they have a majority of ripe olives, but the looks dont show whats inside - The paste was still green. The taste is still punchy artichoke with clear almond flavour.
January
For Gassan, the absolute favorite is the dark purple and ripe olive, once opened the smell of sweet blueberry is noticeable. Really balanced oil with fruity, nutty and artichoke flavour, while remaining a mild pepper in the throat. These olives are super juicy. 350kg picked and 62liters obtained. Very balanced EVOO.
